The newest food trend appears to be less is more, at least when it comes to what’s in it. Before it used to be all about what was added: more vitamins, more natural ingredients, more flavour. Now it’s the opposite: less sugar, less calories, no gluten, no dairy. The industry has seen the trend and is reacting with a major push to create new products that appeal to it.
